pineapple rum cocktail

This pineapple and rum Tiki cocktail is one of my favorites, combining rum, homemade orgeat, pineapple, and passionfruit.
this cocktail has a wonderful creamy texture and nutty hints that pairs extremely well with the pineapple and passionfruit.

For this drink, I used Bacardi gold a great Puerto Rican aged rum that as some Oaky flavor that gives the cocktail another layer of flavor.
another key ingredient is the toasted almonds orgeat that I make.
it’s way better than any other commercial product on the market (trust me I tried them).
finally I used pineapple juice and passionfruit syrup to give it a sweet tiki kick.

Pineapple juice

To get the best results I recommend you juice the pineapple, there is nothing like fresh pineapple juice.
juicing a pineapple is fairly easy.
you can use the easiest method and simply blend the fruit with some water.
then straining it to get rid of all the pulp.

To get a clearer juice you could also press some pineapple cubes – mind that this method will produce less juice.

Aged rum, orgeat, pineapple, and passionfruit

Ingredients

  • 60ml / 2oz - Bacardi Gold
  • 15ml / 0.5oz - Homemade toasted orgeat
  • 15ml / 0.5oz - Lime juice
  • 30ml / 1oz - Pineapple juice
  • 15ml / 0.5oz - Passionfruit syrup

Instructions

  1. add all ingredients to a cocktail shaker
  2. add ice and shake vigorously for 20-30 sec
  3. strain into a chilled cocktail glass and garnish
