
A great cocktail using coconut milk and a pinch of matcha, combined with tequila, agave and lime bitters.
I love using matcha powder in cocktails, it always gives the drink such a nice greenish color.
for those of you who are not familiar with this tea powder, this is a high-end Japanese tea.
made only from the tea leaves (no stems or roots) picked from shade-grown trees.
after the leaves are dried (Tencha) they are grounded into a super thin powder called Matcha.
if you ever saw a Japanese tea ceremony, this is the tea they use.

I found that matcha and coconut milk really pairs well together, so it was only natural for me to base this cocktail on those ingredients.
additionally, I also used Tequila Blanco, agave syrup, lime bitters and for the sake of keeping everything as natural as I can – aquafaba (egg white substitute).
